Here we have all the ingredients for a good espetada, a classic Madeira dish.
- Bay leaves
- Stone bowl (Calhau) to bash salt, garlic & bay leaves
- Board to prepare everything on...
- Spit (even better if a stick of laurel)
- Wood burning grill
Cut the beef into cubes, bash the bay leaves, garlic and salt together and rub into the beef.
Skewer it onto a bay leaf stick and leave it to grill over smoldering wood chips.
Accompany with garlic 'bolo do caco', milho frito, french fries, fresh salad and some wine.
